(Though this recipe is high in fat, 70% of the fat is unsaturated)

Chicken, Avocado, Sprout and Ricotta Bake

4 slices Performax (TM) bread
Half a cup(60g) of reduced fat ricotta cheese
1 cooked chicken breast, sliced
Half a punnet mung bean sprouts
1 large, ripe avocado, sliced
Salt and freshly ground black pepper

1. Toast one side of the four bread slices
2. Spread the other side with the ricotta cheese, and top with sliced chicken breast, sprouts and sliced avocado. Grind a generous amount of salt and pepper over the open sandwiches.
3. Place under a preheated grill and cook for 3 minutes.
4. Serve hot for a quick snack.
